About Kobe Beef

Among Tajima Beef cattle, which boasts a long history and tradition, only those that pass strict standards are deemed as Kobe Beef. The secret to its delicious taste is the shimofuri, meaning "frost" to describe how the fat is finely marbled into the meat's muscles. These fats have such low melting points, close to human body temperature, that they melt in the mouth. The supreme flavor of Kobe Beef can only be produced from purebred Tajima cattle.
