Japanese Cuisine (Washoku)

ANA Originals

The appetizer is creamy new potatoes, stuffed and steamed with conger eel and burdock cooked in sugar and soy sauce. The soup for March is a clam soup. The clam is briefly boiled and wrapped in a tofu and rice flour batter. The soup for April and May features rolled mugwort wheat gluten, accompanied by seabream roe and topped with pepper tree buds. The main for March and April is seasonal masu salmon. The salmon is grilled and flavored with miso mixed with bitter butterbur sprouts. Accompanying are grilled bamboo shoots wrapped in beef and wasabi buds pickled in soy sauce. The main for May is a steamed roll of blackthroat seaperch, wrapping fish paste and yuba tofu skin. The dish is served with grilled lotus root and boiled baby bamboo shoots.

Shinmonzen Yonemura

This is a spring menu made in collaboration with Shinmonzen Yonemura. For the appetizer, roast beef using Japanese beef is finely chopped like tartare and served on two pies, one with lentils and the other with avocado. Smoked firefly squid and heart clam are served on matcha green tea bread with a green asparagus puree. Enjoy with caviar to sprinkle over. The main is Wagyu beef fillet served with bamboo shoots and wakame seaweed, garnished with a thick soft-shelled turtle sauce, demi-glace sauce and a helping of pepper tree buds. The lobster is slow cooked in oil at a low temperature with fragrant sansho pepper and pairs perfectly with butterbur miso.

Enjoy ANA's specially developed original ramen, featuring two distinct flavors: one on flights departing from Japan and another on international routes, each offering a unique taste experience. Both are plant-based, crafted from plant-derived ingredients, making them a delicious and suitable choice for passengers with dietary restrictions.

ANA ORIGINAL ～MEGUMINO HOKKAIDO～ Negi Miso Ramen

A rich blend of Hokkaido’s mixed miso and vegetable stock soup, enhanced with just the right touch of garlic and ginger to create a captivating, savory flavor. Paired with chewy, medium-thick noodles that complement the broth perfectly, the dish is finished with a generous topping of three types of fresh green onions for added depth and flavor.

ANA ORIGINAL～KAORU FUKUOKA～ Tonkotsu Style Ramen

The rich and creamy Tonkotsu-style soup, made with a base of ground sesame and enhanced with aromatic vegetables, is paired with thin noodles that perfectly absorb the rich broth. Topped with traditional Fukuoka Tonkotsu ramen ingredients, including the crunchy texture of wood ear mushrooms and red pickled ginger. Additionally, enjoy the flavor variations with a drizzle of fragrant flavored oil.

The flagship red Bordeaux blend from Kenzo Estate in Napa valley. This wine is elegant, reserved and enchanting, with aromatics framed by ripe raspberry and rose petal. On the palate, pronounced layers of berrylike fruits mingle with black pepper, with an elegant acidity and fine tannins. This is excellent wine with good depth and delicate smoothness. A wonderful paring with meat dishes such as duck and beef.

Shinning like a star on the map of the wine world, François Mikulski is a winemaker from Meursault, France. After their first release in 1992, they quickly rose to fame and popularity, particularly in France where they are featured on the menus of numerous starred restaurants. In all of its wines, the winery strives to accentuate the natural flavors, elegance, and purity of the grapes while simultaneously tapping into the unique punchy yet refined characteristics of the terroir.

Noguchi Naohiko Sake Institute Inc. (Ishikawa) 19% ABV

Naohiko Noguchi—god of sake brewing—has launched a brewery as a new culumination of his dedication to the art of great sake for over 70 years. Aromas of strawberries, cotton candy and rice flour notes with slight nuttiness. The soft, rich and creamy sweetness on the palate is balanced by mineral nuances and astringency, followed by the flavor of fermented butter.

Under the philosophy of Jikon—"truly living in the present" in Zen Buddhism—the brewery crafts its sake with uncompromising quality. The brewery, based in the Iga region of Mie Prefecture, preserves its 200 years of tradition at its main building which is designated as a Tangible Cultural Property of Japan. The Bright aromas of passion fruit and citrus bring together the perfect balance of acidity and sweetness. The taste is fresh and juicy with an elegant finish.

TOKOYAMA SAKE BREWERY (Fukui) 15% ABV

Founded in 1804, we aim to make sake that expresses the words "EtsuzanJakusui," which express the vast nature of Fukui. Using only rice grown in Fukui prefecture, we deepen our ties with the local community, contribute to agriculture, and brew sake from Fukui that will captivate the world. The rich, full-bodied rice flavor and elegant aroma envelop the whole dish, creating a perfect balance with a sharp finish that makes this a truly outstanding product.

Dallmayr is the only coffee roastery to also have decades of experience with tea. The company was already purchasing precious tea leaves from special traders at the end of the 19th century (around 1850). Since the 1930s, in regard to the high quality standards of the delicatessen in Munich, the Dallmayr tea department was known for its premium and outstanding tea varieties.
